Overview

The position has responsibility for the overall food service operations for Rochester Area Services.  Responsibilities include: inspecting the program and Corps food services to maintain health, safety and sanitation regulations; coordinating the overall operations of menu planning, special lunch activities, grant preparation and reporting for food service related funding; establishing food service standards for personnel performance; inventory control and estimating cost of food/beverages.

Responsibilities

  1. Procure and coordinate pick up of food donations from organizations. Estimate daily food consumption, place orders with suppliers.
  2. Coordinate and schedule the delivery of food and beverages, receive and check the content of deliveries.
  3. Record all in-kind donations picked up or delivered by RAS Driver.
  4. Evaluate the quality of food before and after it is cooked.
  5. Oversee cafeteria and kitchen supplies and operations at all RAS locations. This includes the Kitchens in the social service programs and at the Corps (Liberty Pole Way, Northwest and Temple).
  6. Supervise food service staff and operations, following local, state & federal guidelines and American Culinary Association standards. 
  7. Develop, plan and post weekly menus for programs, events and meetings, ensuring that food is appetizing and nutritionally suitable.
  8. Responsible for bi-weekly Food Service staff timesheet approval in payroll system.
  9. Keep daily record of meals and maintain inventory of supplies and equipment.
  10. Coordinate certifications for all food service staff.
  11. Act as Foodlink liaison, coordinate menus and food service for Booth Haven, Safe Haven, Hope House, after school programs, Sunday Soup Kitchen (Corps), lunceheon for special meetings/events as needed, and seasonal activities.
  12. Responsible for all food service data and statistics reporting, including property and equipment inspections.
  13. Sign off on food purchase orders before they are submitted to the Associate Director of County Operations for approval.
  14. Assist in procuring Grants for Food Service (food, equipment)
  15. May require the use of personal or RAS vehicles. Individual must possess a valid driver’s license and have an acceptable driving record.  Use of a personal vehicle for RAS business will be prohibited if the employee is not authorized to drive an RAS vehicle or if the employee does not have personal insurance coverage.
  16. Coordinate box truck for Seasonal pickups for Christmas distribution and coordination of Food Service seasonal volunteers. 
  17. Responsible for box truck and canteen vehicle maintenance and service.
  18. Other duties as assigned.

Qualifications

  1. Associates Degree. Graduate of a recognized food service program.
  2. Two years supervisory experience in Culinary Services management preferred.
  3. Excellent communication and problem solving skills required.
  4. L1 Certification - Monroe County Department of Public Health will be requiring the presence of at least one trained Food Service Worker (L2) during all operating times of kitchen, and food service facilities.
  5. Valid NY State Driver License.
  6. Must be able to produce professionally written documents.
